Barry John Gourmet Sausages

My dream and business, Barry John Gourmet Sausages, came about from my years of working alongside my father in his well established family butchers which is based in Cavan Town. I started to make sausages when I was only 10 years of age and won my first sausage competition at 13. After winning this competition my interest grew and I saw that sausages could be so much more than a breakfast tradition. I started to create unusual combinations of flavoured sausages. And so the brand Barry John Sausages was born. I am now well known for these quirky unique flavours, which include my European and National Award Winning flavours, such as “Bacon & Cabbage”, “Chocolate Chip & Honeycomb” and most recently “The Spice Bag”. What makes these sausages unique is the 75% pork meat I use in the recipe and the original flavours we create. My team and I still handmake & handwrap all of our sausages in small batches, ensuring a top quality product is made.
